This Delicious Banana Cherry Cake is a great dessert for hot summer days.
No-bake and easy to make. Perfect to make your family happy.
I invented this recipe simply by using my favorite ingredients – bananas, cherries, vanilla cream, and plain ladyfinger cookies. It is a light dessert that could use any variations by using different fruit. Combine what you like most and you will get desired results. Just follow the instructions and you won’t make a mistake.
2-3 Bananas sliced
1 Can Sour Cherries in syrup or 150 g or 1 1/4 cup fresh pitted cherries
1 Pack of Ladyfinger cookies
7 egg yolks
7 tbsp sugar
1/2 l or 2 cups milk plus 3 tbsp
1 Vanilla pudding powder
225 g or 1 cup Butter or Margarine
1 Whipping cream – 500 ml or 2 cups
50g or 1/2 cup Bitter-sweet baking chocolate (optional)
Whip up whipping cream and leave it in the refrigerator.
Mix 7 yolks and 7 tbs sugar using a mixer. When the mixture gets pale yellow add vanilla pudding powder and mix it for a minute longer. Then add 3 tbsp milk to mix for another minute or two. In the meantime heat up 1/2 liter of milk and when it gets hot, pour in already mixed yolks batter and cook stirring frequently until it thickens. Set aside to cool down a bit.
When the cream is cooled add butter or margarine and mix it well with a mixer. Then add 3 tbs whipped cream, mix it in and the cream is done. If you are up to it, split the cream into two halves and add 50 g of melted chocolate in one half. If not, just leave it as is. Set aside.
Take a 20 cm baking spring pan and put the first layer of Ladyfingers on the bottom. I usually dip them in strong black coffee or cherry juice that was left from the can. Peel bananas sliced them into 1 cm thick rounds, and layer them on top of the Ladyfingers.
Pour the first half of the cream on top of the bananas, then add another layer of Ladyfingers. Repeat the cream and then cherries. Decorate with whipped cream.
Your Delicious Banana Cherry Cake is ready. Leave it in the refrigerator for an hour or serve it immediately.
