Bread Lasagna Recipe

  • 8 – 12 old bread slices
  • 1/2kg or 1 lb ground meat
  • 1 small onion
  • 2-3 pickled cucumbers
  • 200g or 1/2 lb mushrooms
  • 2-3 bacon slices
  • 2dl or 3/4 cup sour cream
  • 2-3 eggs
  • salt, black pepper, basil, garlic powder, vegetable oil
  • 2dl or 3/4 cup milk + some extra for bread soaking
  • 150g or 1 1/4 cups shredded cheese
Directions
  • Step 1 Heat 2 tbsp vegetable oil in the frying pan. Dice the onion and add it to the pan.
  • Step 2 Cook and stir the onion until it has become translucent.
  • Step 3 Add ground meat, chopped bacon, salt, garlic powder, and black pepper to taste.
  • Step 4 Stir frequently for 5 minutes or until almost done, then add sliced mushrooms.
  • Step 5 Cook it on medium heat for another 5 minutes, sprinkle some fresh basil and stir until all the juices evaporate. Take it from the stove, put it aside, and add chopped pickles.
  • Step 6 Slice the bread to approximately 2 cm or 1 3/4″ thick and briefly soak it in milk. Do not soak it too much
  • Step 7 it might become soggy. Place bread slices in the baking dish, covering the bottom. Spread some sour cream on it, and then add ground meat with mushrooms.
  • Step 8 Put another layer of milk-soaked bread on top. Whisk 2 eggs with some milk and the rest of the sour cream, then pour it all over the bread lasagna. Bake it in a 200 C / 400F preheated oven for 30 minutes.
  • Step 9 Occasionally check your bread lasagna and adjust the heat if needed. After half an hour, take it out, sprinkle some shredded cheese on top, and bake for another 5 minutes or until the cheese melts.
  • Step 10 Your easy meal is ready! Let it cool down a bit and enjoy it.
The Bread Lasagna recipe was invented by my mother, one fine day many years ago when she had a lot of old bread left.

It is as tasty as a regular lasagna, but it doesn’t take as long to make it.

It can be served as a quick dinner or any other meal when you are time-limited, but you need something tasty and comforting for your family or guests. 

The ingredients here are approximate because and depend on the size of the dish you are going to use.

I usually bake the bread lasagna in the 30cm X 20cm (12″ x 8″) lasagna dish. 

Ingredients:
